Peanut Salad
Ingredients
1 cup raw peanuts with skin
1 carrot, grated
1/2 green mango, finely chopped(Optional)/mango powder
1/2 cup cucumber
1 tomato finely chopped
1/2 red onion, finely chopped
1 tablespoon fresh coriander leaves, finely chopped
juice from 1 small lemon
1 tsp chat masala
1/4 tsp black pepper powder
1/4 tsp roasted cumin seed powder
1 tsp coconut oil (optional)
salt
Method
1. Pressure cook the peanuts for 3whistles and let the pressure completely release before opening the cooker. Drain and place the peanuts in a large bowl. Alternatively, you can cook the peanuts with enough water on stovetop until completely soft.
2. Add carrots, green mango, tomato, cucumber, onion, lemon juice and salt. Mix well.Add chat masala.
3. Garnish with chopped coriander leaves.
This healthy and wholesome peanut salad can be used as a side salad along with your favorite dish or just munch them when you are hungry.
