Paneer rice or paneer pulao is one of the easy rice recipes that is healthy, easy to prepare and can that goes good in lunch or as a quick dinner....
Ingredients:
Basmati rice long-1 cup
Paneer cubes-1 ½ cup
Chopped veggies- ¼ cup (optional)( fresh green peas, carrot, sweet corn)
Oil / ghee-2tbsp
Onion thinly sliced-1
Ginger garlic crushed-1tsp
Lemon juice-1tbsp
Garam masala-1 tsp
Pepper powder-1tsp
Cumin powder- ¼ tsp
Salt-to taste
Mint leaves chopped-1tsp
Coriander leaves chopped / spring onion-handful
Boiling water-2 cup (or 1 3/4 cup)
For paneer marination
1 1/2 cup paneer cubes
1/2 tsp ginger garlic paste
1/2 tsp pepper powder
1/2 tsp garam masala
salt as needed
1 heaped tsp besan / chick pea flour
¼ to ½ kasuri methi
Preparation:
Wash and soak the rice in water for 30 minutes. Drain it.
Heat ghee in a pan and sauté onions till golden brown in color.
Add ginger garlic crushed and sauté for few seconds.
Make the flame to very low and add mint leaves, cumin powder, pepper powder and garam masala.
Add vegetables and sauté for a minute.
Add drained rice in to the pan and sauté for a minute.
Add lemon juice, salt and boiling water in to it.
Mix well and cover cooks it until all the water gets absorbed and the rice is cooked perfectly (on medium-low flame)(stir gently for 2 to 3 times at the last stage of cooking in order to prevent sticking the rice on the bottom of the pan).
At the time of cooking rice, heat another teaspoon of ghee in a non-stick pan and fry the paneer cubes for a minute until both sides are golden in color (don’t over fry).
When the rice is cooked switch off the flame and let it rest for 15 minutes.
After 15 minutes open the pan and mix gently with paneer and coriander leaves.
Serve hot and enjoy!!!
