Vegetable Curry


This is a simple and healthy veg curry goes well with chappathi, dosa and idli.

Ingredients:

Potato 1/4 cup
Carrot 1/4cup
Beans 1/4 cup    
Tomato 1no
Green chilly 3nos
Turmeric powder 1 tsp    
Coconut milk 1/4cup
Salt

Tempering:
Mustard 1 tsp
Curry leaves
Chilly powder 1tsp
Coriander leaves

Method:      

Pressure cook all the vegs with little  water, turmeric powder and salt till 4 whistle comes. Open the lid and just smash some of the veggies.
Heat a pan pour oil and put mustard Curryleaves and chillypowder. Saute till the raw smell goes off. Pour the cooked vegs into this and add 1/4 cup coconut milk powder. Boil this and garnish with coriander leaves.
