Beef Curry


Spicy and Tasty Kerala Style Beef Curry


Ingredients
1. Beef - 1 Kg, cut into medium sized cubes
2. Onion - 4 large, sliced thin
3. Tomato - 2 large, cut into cubes
4. Green chillies - 6 to 8 , slit
5. Cardamom - 4 to 5
6. Cinnamon - 2 to 3 , 2 inch sticks
7. Cloves -  4 to 6
8. Black peppercorns - 15 to20
9. Star anise - 2
10. Bay leaves - 1 to 2
11. Curry leaves - 2 sprigs, fresh
12. Ginger - 2" piece, finely chopped
13. Garlic - 8 to 10 large cloves, finely chopped
14. Red chilly powder - 2  tsp
15. Coriander powder - 3 tsp
16. Turmeric powder - 1/ 2 tsp
17. Coriander leaves - For garnishing
18. Oil - As required
19. Salt - As required
20. Water - As required

Method
Dry roast ingredients from 5 to 10.
Grind the roasted spices into fine powder. Keep it aside.
Heat some oil in a pan.( You can use pressure cooker itself to avoid the use of extra pan.) Add garlic, ginger,  onions and curry leaves. Cook till the onion turns translucent.
Add chilly powder, coriander powder and turmeric powder. Stir well.
Add tomatoes and green chillies. Stir.
Add beef and salt. Mix thoroughly.
Transfer beef into a pressure cooker. Add water just till the level of beef.
Cook in a medium flame for 10 to 15 minutes or till it is done.
When the pressure is gone, open the lid. Let the flame be at simmer now.
Add the roasted spices according to your taste. Mix well.
If the gravy is watery, let it boil till it become thick enough.
Garnish it with coriander leaves/ curry leaves and serve.
