Mint Chicken
Ingredients
Chicken - 500 gm
Cardamom - 3
Cloves - 2
Fennel seeds -1tsp
Whole pepper corns - ½ tsp
Onion - 2, medium (sliced)
Green chili - 4 (chopped)
Ginger (crushed) - 1 ½ tsp
Garlic (crushed) - 1 ½ tsp
Tomatoes - 1 (chopped)
Yogurt - 1 /2 cup
Chili pwd - 2 tsp
Coriander pwd -2 tsp
Turmeric pwd - ½ tsp
Pepper pwd - ½ tsp
Cumin pwd - ½ tsp
Garam masala pwd - ¾ tsp
Coriander leaves - 3 tsp
Mint leaves- 1/2 cup
Lemon juice - 1 tsp
Water - ¼ cup
Salt - to taste
Oil - ¼ cup
Method
Heat oil in a deep pan, add cardamom, cloves,fennel seeds and whole pepper corns. To this add sliced onion and saute till soft and it changes the color. To this add crushed ginger, garlic and green chilies and saute till the raw smell disappears. Now add chopped tomatoes and chicken pieces and cook on high flame for about 2 minutes. Reduce the flame, add chili, coriander, turmeric , pepper and garam masala powder and salt and saute till the raw smell disappears. Stir in the yoghurt with mint mix to it, reduce the flame and mix till well combined. Add ¼ cup water to it and Add coriander leaves and lemon juice to it and mix well and cook it till done, covered. Serve hot with roti.
