Chinese Egg Fried Rice

Ingredients:

Long grain Basmathi rice - 3 cups
Eggs - 2 Nos, whisked
Finely diced Carrots - ½ cup
Thinly chopped Green beans - ¼ cup
Sweet corn - ½ cup
Shallots - 2 Nos, finely sliced
Garlic - 2 cloves, finely chopped
Finely sliced spring onion whites - 1 tbsp
Lite/white soy Sauce - 1 ½ tbsp
Dark Soy sauce - 1 tbsp
Kashmiri Red chilli flakes - 1 tsp
Vegetable Oil - ¼ cup
Sugar - ½ tsp
Finely sliced spring onion greens - 2 tbsp
Salt to taste

Directions:
Heat oil in a large pan over high heat, add the whisked egg; Stir continuously till the egg is slightly golden on edges; Remove and set aside. Leave remaining oil in pan.
In the same pan add shallots, garlic, spring onion whites and cook until translucent.
Add carrot, green beans, sweet corn and sauté for 2-3 minutes until lightly golden.
Now lower the heat, add the cooked rice and fried egg and mix well.
Then add sauces, red chilli flakes, sugar and salt; Toss till well combined.
Garnish with spring onions greens; Serve hot.
