Chemmeen Vada


Chemmeen Vada is a delicious Indian recipe served as a Side Dish. It's a typical Kerala cuisine , quick and easy appetizer which is spicy and delicious. This Kerala shrimp cutlet is very easy to prepare and mouthwatering....

Ingredients:
Prawns                      : 20 to 25 nos or 1/4 cup cleaned and de-veined.
Coconut grated           :  3/4 (optional)
Chana Dal                     : 2 or 3 tbsp for more crunchy (optional), soaked in water for 15 mn
Small Red Onions/Pearl Onions : 6 to 8 (chopped)
Ginger       :1" piece (finely chopped)
Garlic         : 2 cloves (finely chopped)
Green chilly : 4 nos or as per (finely chopped)
Red chilly powder        -  1 tsp
Turmeric powder        - 1/4 tsp
Fennel seed                 -  1/2 tsp
Curry leaves                 -  1 sprig (finely chopped)
Salt to taste

     METHOD

First grind ginger, garlic,  shallots along with fennel seeds. Then add chilli and curry leaves.
Next grind the remaining ingredients except cleaned prawns. Then last mix the prawns with the grinded masala and grind it along with all ingredients  to a coarse mixture. Do not grind more. Check and adjust the salt.
Remove the masala to a plate and mix it with our finger.
Grease your palms with little oil and make a small round balls from the dough; flatten into thin patties using your hands and deep fry in oil  turning the vada’s both sides and fry till its golden brown and crispy.
Drain and place on paper towel. Serve warm with rice or enjoy as a snack!
NOTE:
The flame should always be medium .
Make small balls from the mixture otherwise it will not cook properly.
