Ingredients :
Chicken leg with thigh -2 pieces
Oil

For First Marination:
Kashmir Chilli Powder - 11/2 tsp
Salt to taste
Lemon Juice - 2 tsp
Ginger garlic paste-1  tsp

For Second Marination:
Thick Unsour Curd / Yogurt - 1/2 cup
Kashmir Chilli Powder - 1 tsp
Coriander Powder- 1/2 tsp
Cumin Powder - 1/2 tsp
Chat Masala Powder - 1 tsp
Black Pepper Powder - 1 /2 tsp
Garam Masala Powder - 1 tsp
Turmeric Powder - 1/2 tsp
Red Food Colouring a pinch
Ginger Garlic Paste - 1 tsp
Kasuri Methi Leaves - 1/2 tsp
Mustard paste -1/2 tsp
Butter or Ghee for Brushing on top
Chat Masala for Sprinkling on top

Method

Make deep slits on chicken. . Combine all the ingredients for first marinade and  Leave this aside for 30 mins.
Now take second marination ingredients in a bowl and mix well. Apply this marinade on to the chicken pieces and mix well.Leave this to marinate for 6 hours or over night.

** We can prepare in oven or in stove top**
In oven

Preheat oven to 450 deg F and place the chicken pieces on a greased baking tray.
Bake for 10 minutes and turn over and
remove it and flip over, apply leftover marination over it  and bake it for 5 more mins.Remove the tray from oven, apply ghee/ butter all over it. Bake for another 10 minutes.
Now reduce the heat to 250 deg F  and grill for another 10 to 15 minutes.
Remove it from oven, give a final glaze with butter and sprinkle some chat masala over it and  apply a few drops of lemon juice ..
Serve hot with onion, carrot, lemon wedges .....

Stove top cooking method:

If choose to cook chicken over the stove top then follow the recipe below. After marinate for 6 to 10 hrs.Heat a non-stick pan and add the chicken pieces along with the masala and cook, covered. Stir the masala frequently till it becomes golden brown and coats the chicken pieces. ... When chicken all dried up and cooked. Once all the liquid has dried up - Light a gas burner and roast chicken pieces over high flame till it is well roasted with black dots over it ...
