Fried Sardines
Kerala style Mathi Fry, Sardine Fry :

Mathi/Chaala as we call in malayalam, is a popular and favorite fish of Malayali. Fried sardines / Mathi fry is so tasty and you can never have just one... It’s too good, very healthy and delicious…

Ingredients for the dry spice mix:
•Chilli powder – 1 tsp
•Turmeric powder – 1/4 tsp
. Ginger-Garlic Paste : 1/2 tsp
•Black pepper / fresh green pepper corns – 1 tsp crush  thoroughly using an grinder
•Salt – 1/2 tsp

Other Ingredients:
•Fish – 500 g
•Oil – 4tsp
•Onion – 1 (medium)
•Curry leaves – 2 sticks
•Lime – 1(optional)

Method:
1.Mix all the dry spices to the fish. If its too dry sprinkle some water to make the spices stick to the fish. Keep covered in the fridge for at least an hour.
2.Take the fish out of the fridge and keep outside for sometime.
3. In a frying pan add oil and place the curry leaves(whole) at the bottom of the pan. When the oil is heated place the fish carefully and cook in medium-low fire turning once.
4.When it’s fried to your preference take it out and add some onion rings and freshly squeezed lime juice.
5. Serve hot with rice and Enjoy!
