Healthy Vegetable Kurma

Tasty , Quick and  Oil Free Vegetable Kurma

 Ingredients :
  --------
Carrot-1
Potato-2
Beans-10-12
Tomato - 1
( if u want u can include cauliflower ,green peas etc)
Onion-1 small
Curry leaves-1 string
Water-2cup
Salt-to taste
Coriander leaves-few
Curd- 1tbsp
Cashewnuts-6

For the masala paste :
 ------------
Onion-1small
Ginger-small piece
Garlic- 3 to 4
Green chilli-3 to 4
Curry leaves- 1 string
Cloves-1
Cinnamon-1 small
Cardamom-1
Fennel Seeds-1/4tsp
Grated Coconut-4tbsp
Turmeric powder-1/2tsp
Coriander powder-1/4tsp

Method :
 -----
Wash and peel vegetables..Cut into small pieces(potato,carrot,beans,tomato)
In a cooker add all these vegetable along with 1 onion sliced and water .
Cook it .(one whistle is enough)
Let it cool down and open the cooker and set aside
Add all ingredients listed in masala paste into a blender and make a very fine paste ..
Add this paste to the  cooked vegetable along with salt and allow to boil .. Stir well .Allow to thicken the gravy to a semi medium consistency .. Add cashew nuts paste along with curd.
Garnish with coriander leaves ..
