Okra Stir fry/Bhindi Fry/Lady's Finger Fry/ Vendakkai Poriyal Bhindi Fry is a simple dish, but it is not quick, we have to cook it on a low flame for 15 to 20 minutes. Apart from taste, it has amazing health benefits... Ingredients 200 grams Okra/Vendakkai 1/4cup Onion/Shallots chopped 3 tbsp Oil 1/4 tbsp Mustard seeds/ jeera 1/2 tsp Urad Dal 1 pinch Turmeric Powder 1/2 tbsp Sambar Powder/Chili powder Few Curry leaves Salt Preparation: Wash okras and pat dry it with a paper towel or cloth, then cut it in to small pieces. Method: Heat oil in pan, add mustard/ jeera , curry leaves and urad dal. Allow it to pop. Add chopped onions, cook till the onions become soft. Add okra and saute on a low flame for a minute. Cook okra till the sliminess disappear. Add chili powder/sambar powder, turmeric powder and salt. Cook until the okras become slightly brown and crispy. Serve hot with rice.
