Masala Paniyaram

Masala Paniyaram Ingredients Idli dosa batter– 2 cups Vegetables, mixed – 1/2 cup Onion – 1 Green chilli – 1 Ginger, finely chopped – 2 tsp Turmeric- 1/4 tsp Red chilli powder – 1/2 tsp Salt – As needed Finely chopped coriander leaves To temper Oil – 2 tsp Mustard – 1/2 tsp Urad dal – 1 tsp Curry leaves- a sprig Asafoetida – 1/8 tsp Method Finely chop vegetables – I used 1/2 of a small carrot, 2 beans, 1/4 of a capsicum. Keep all the ingredients ready and temper in a kadai with mustard, urad dal, curry leaves and asafoetida. Add the vegetables. Sprinkle required salt and stir fry for 2 mins in medium or low flame. Mix the vegetables with batter and add turmeric, red chilli powder. Add finely chopped coriander leaves to the batter. Mix well. Heat paniyaram pan, grease with few drops of oil and pour the batter. Cover and cook in medium flame. Flip and cook until golden on both sides. Notes Adding green chilli is purely optional. If kids are eating skip it.
