Soya Chunks Dry Masala

INGREDIENTS
2 cups soya chunks
3 tsp oil
1 tsp cumin
1 onion
3 cloves garlic
1 inch ginger
1 large tomatoes
½ tsp turmeric powder
1 tsp kashmiri red chili powder ½ tsp coriander powder
½ tsp cumin powder
salt to taste
½ tsp amchur powder / lemon juice
2 tbsp coriander leaves, finely chopped
1 tbsp fried onion.
INSTRUCTIONS

First cook soya well .once the soya is cooked drain off the water and transfer to a bowl of cold water. Squeeze off the soya chunks to remove the absorbed water and keep aside
Next in a kadai heat oil , fry onion and keep aside . In same oil then add cumin seeds.
Saute till the cumin seeds turn aromatic.
Further add finely chopped onions and continue to saute. Then add garlic, ginger and saute till the raw smell disappears completely.
Now add finely chopped tomatoes and saute.
Saute till the tomatoes turn soft and mushy.
Then add turmeric, chili powder, coriander powder, cumin powder and amchur pd or lemon juice.
Saute well till the oil starts to release from masala.
Now add squeezed soya and required salt. Mix all . Cover and simmer for 5 minutes so that soya absorbs all masala.
Finally, serve soya masala garnished with coriander leaves / fried onion .
Can serve with rice or chapathi....
