Iftar Dish for Ramadan, Malabar snack
Egg stuffed Bhaji / Mutta Nirachathu
It is one of the delicious dish from Malabar. Let’s have a look on this delicious recipe….
Ingredients
5 Egg
1/4 Cup Maida / All purpose Flour
1/2 cup gram flour( kadala mavu)
1/2 Cup Onion finely chopped
1/2 tsp Ginger Paste
1/2 tsp Garlic Paste
1 tsp Green ChillyFinely Chopped
1/4 tsp turmeric powder
1/2 tsp Chilly Powder
1/2 tsp Garam Masala powder
1 Pinch Fennel seed powder
1 pinch asafoetida
2 tbsp Coriander leaves finely chopped
1 Sprig Curry leaves
Salt to taste

Instructions
Take maida and gram flour together in a bowl. To this add one egg’s white and enough amount of salt. Add water little by little and make a smooth and thick batter.
Hard boil 4 eggs, remove it’s shell. Cut boiled eggs into equal halfs. Remove egg yolks from each pieces and keep it aside.
Heat oil in a pan. Add onion, ginger, garlic, curry leaves, green chilly and some salt. Saute it well until the onion becomes transparent.
Then add turmeric powder, chilly powder, fennel powder and garam masala powder. Sauté a while.
Transfer the cooked egg yolk ( which we already removed from egg white), mix well with masala. Sprinkle some coriander leaves,asafoetida. mix well and switch of the flame.
Fill masala in the part of the boiled egg from where we took out the yolk.
Dip the stuffed eggs in the batter which we already prepared.
Heat oil in a pan, deep fry until it becomes golden brown color. Remove it.
Now our easy, tasty and yummy “mutta nirachathe” is ready to serve…. Serve hot, enjoy!!
