Spicy Aloo Roast

Here is the yummy potato fry recipe ,tossed and roasted in aromatic Indian  spices !

Ingredients:
Potatoes                       - 3 to 4
Oil                                - 2 tbsp
Cumin                           - ½ tsp
Split urad dal                - ½ tsp
Curry leaves                  - 5 to 6
Onion medium               - 2
Turmeric pwd                - ¼ tsp
Red chilly pwd              - 1 tsp
Salt to taste
Method
Wash and pressure cook the potatoes till tender.
Allow them to cool and peel the skin.
Once the potatoes are cooled down, cut the potatoes into a desired shape and add it to a bowl.
Add the turmeric powder, salt and red chilli powder to the boiled potatoes and mix well.
Heat a tablespoon of oil in a wok.
Add the cumin seeds, curry leaves, asfoedida and allow them to crackle.
Add the potatoes to the oil and stir well until all the condiments get well coated.
Mix gently and cook on low flame for 5 to 7 mins.
Drizzle oil to the sides to roast to few more mins.
Roast the potatoes until they have a slightly crispy texture. More like the some crumbs of the potatoes turn crisp.
Now our spicy, tasty and easy potato fry is ready to serve..!
