Spanish Omelette


Spanish Omelette Recipe
A simple omlette preparation from spain with  eggs beaten and spread like omelet with fried potato slices and onion rings as topping.

Egg : 4
Olive oil    : 2 tsp
Onion sliced  :2 medium
Green capsicum : 1
Potatoes    : 2 sliced into thin rounds
Tomatoes.   :  2
Green chilli chopped     :2
Salt to taste
Black pepper powder   : 1/2 tsp
METHOD
Step 1:   Heat oil in a non stick pan. Add onion and capsicum and sauté. Add the sliced potatoes and toss. Add green chilli and mix. Sauté the vegetables till lightly browned.
Step 2 :  Beat the egg and add salt and pepper powder and beat again. Pour the eggs over the vegetables.
Step 3 :   Cover with a lid for a minute or so. Uncovering and sprinkling oil around the edges in between.
Step 4:   When the upper part turns a little dry. Carefully flip the omelette over with the help of flat spatula.
Step 5  :   When the other side also gets cooked up well, carefully transfer the omelette to a plate.
Tasty Spanish Omelette  is ready. Sprinkle some freshly ground pepper and serve hot.

Serve the Spanish omelet with wheat breads and ketchup. It is served as an appetizer and sometimes also as a light dinner .
