Cheera Thoran / Red Spinach Stir Fry
Ingredients
Chuvanna Cheera Thoran
Cheera - 2 bunches
Shallots/Cheriya ulli-6 to 7
Crushed Red Chilli - 2tsp (according to taste )
Dry Red Chillies : 2 nos (broken into halves)
Salt-
Coconut Oil-2tbsp
Grated Coconut-1/4 of 1
Curry leaves-1 string
Turmeric powder-one pinch
Mustard - 1 tsp
Method
Clean the leaves well under running water many times .. and Keep them in a stainer .. let it dry thoroughly. (Note : Dry the leaves completely before cutting). Chop the spinach finely.
Heat the oil in pan and splutter mustard seeds, add sliced shallots, dry red chillies, curry leaves and saute for a few minutes.
Add grated coconut.stir fry for 2 minutes.Then add turmeric powder and crushed chilly and saute well. Add the chopped spinach and mix everything and reduce the fire to medium, keep covered for a minute .(Note : Don't cover for long, since the steam will accumulate ,which in turn end up in lumps). Then open and sprinkle some salt and then cook on low flame for 5 minutes, stirring occasionally till all the water evaporates, adjust the salt.
Stir fry carefully for another 2-3 minutes so that all water evaporates and the spinach is not soggy...Serve with rice & Enjoy!
Notes :
Wash the spinach and spread it on towel/ cutting board at least half hour before you cut them, This is done to avoid lumps in Thoran .
