Rava Upma

Rava Upma  is a popular breakfast dish in India. It is nutritious, tasty and very easy to make.

Ingredients:
Rava/ semolina - 1 cup
Water - 1 1/2 cup
Onion  - 1
Green chillies - 4-5
Chopped ginger-  1/2 tsp
Curry leaves - 1 sprig
Coconut Oil - 2 tsp
Ghee - 3/4 tsp (optional - added for flavor)
Salt - 1 tsp + adjust

To temper
Oil - 1 tblsp
Mustard - 3/4 tsp
Urad dal - 1 tsp
Channa dal - 1 tblsp
Curry leaves - 1 sprig
Peanuts-  1 tbsp

Method
Heat a kadai/pan and dry roast rava in medium flame until a roasted smell of rava comes.. Don’t let it change colour, so keep the flame to medium always and keep roasting. The rava will become non sticky and free flowing if roasted correctly. Set aside.
Mean while, slit green chillies, chop ginger,slice onion length wise.
In a kadai, add oil and temper with the items given under ‘To temper’ . Add green chillies, onion and fry till transparent without changing its colour.
Add water and salt, bring it to boil. Check for salt. When the water starts boiling, reduce the flame to low, add rava gradually with one hand and keep stirring with your other hand.
Once the rava absorbs all the water, cover and cook on low flame for 6-7 minutes. Mix well, it will soon become thick absorbing water.
Then close it with a lid and cook for 5mins or till it becomes fluffy. . Turn off heat . Let it settle for 10 minutes before serving.
