For caramel:
Granulated sugar - ⅓ cup
Water - 1 tsp
For pudding filling:
Milk - 2 cups
Granulated Sugar - ½ cup
Vanilla extract - 1 tsp
Eggs - 3 Nos
Salt - 1 pinch


Directions
Caramel Preparation:
Add sugar and water in a heavy bottomed pan; Stir continuously on medium heat until the sugar is completely dissolved.
Bring to a boil without stirring until the color turns into golden caramel brown.
Quickly pour the caramel into the custard trays, then arrange the pudding trays in a big tray and set aside.

Pudding filling Preparation:
Preheat oven to 350°F.
Boil milk in a sauce pan; Set aside and allow to cool completely.
In a mixing bowl, break in the eggs. Add vanilla extract, sugar, salt and beat until the color turns to yellowish white.
Sieve the milk and pour into the egg mixture; Stirring constantly and mix well.
Fill the pudding trays with the prepared cream. Then pour boiling water into the big tray and fill halfway up the sides of the pudding trays(re
bake till the pudding is set approx 30 minutes to 1 hour according to the size of your  tray).
Then remove the  trays from the big tray; Set aside and cool completely.
Refrigerate overnight or at-least for 8 hrs.
Detach the pudding from the tray by cutting around the edges using a knife.
Place a dish on top of the pudding tray and turn upside down.
Ready..
