Chicken Fried Rice
INGREDIENTS :-
200 gm chicken breast (cut into small pieces)
2 cups cooked rice (boiled with salt and a tsp. of oil, then drained and cooled completely)
3 tbsp. oil
pinch of salt and pepper
1 egg
1 tbsp. spring onion, chopped( seperate white part and green)
1 small green capsicum
5 or 6 beans
1 carrot
¼ tsp. garlic paste
splash of soya sauce
INSTRUCTIONS:-
In a medium bowl, toss chicken with soy sauce and sesame oil. Cover and marinate at room temperature for 10 minutes.
Heat a large nonstick skillet over medium-high heat. Add chicken and marinade and stir-fry until chicken is cooked through. Transfer chicken to a plate; set aside.
Beat the egg with salt and pepper and scramble it.Transfer to a plate and set aside.
Heat the oil, add the garlic and spring onions(white part), fry for a minute.Now add beans, the capsicum and carrot, stir fry for a few minutes then add the cooked rice. Increase heat to medium-high, stir in rice until incorporated and cooked through, 3 minutes. Splash some soya sauce on it, then put the heat on very low and add chicken and egg. stir to combine. Garnish with spring onion (green part)cover the pan.
Let it steam for about 5 minutes and serve.
