AVIYAL

Aviyal is a unique traditional dish of kerala (South India) and no kerala feast (sadya) is complete without aviyal. It is one of the favourite  dishes of almost all keralites. In Kerala, it is an important side dish for any wedding among hindus or an important dish for Traditional Kerala Feast. It is famous for its special flavors and it is a thick mixture of different vegetables,curd and coconut, seasoned with coconut oil and curry leaves.

Ingredients:
Vegetables of your choice, cut into 2" long pieces ( refer note)
Turmeric powder-1/2 tsp
Grated coconut- 1 cup
Green chilies- 3 to 4 nos
Cumin seeds(crushed)-1/2 tsp
Shallots(chumanulli)- 7 to 8 nos
Yogurt-3 tbsp
Curryleaves- 2 sprigs
Coconut oil- 1 tbsp
Water
Salt to taste

Method
Coarsely grind grated coconut,green chilies ,cumin seeds and shallots .Keep aside.
Cook the vegetables with just enough water (almost 1/2  to 3/4 cup ) and turmeric powder,on medium flame.
When the vegetables are cooked  and  tender (do not over cook)  add the coconut mixture and salt to taste stirring carefully.
Cook for 2 minutes till dry on low flame.
Add yogurt and mix carefully.Switch off the stove.
Finally add curry leaves and coconut oil.
Remove from the fire and keep covered till serving.
Serve with rice
Note:
You can use  vegetables like -
Yam( chena ) 1/2 cup
Snake gourd 1/2 cup
Raw Banana( Pachakaya ) 1/2 cup / 1 nos
Cucumber(vellarikka), 1/2 cup
Drumstick 1 to 2
Beans1/4 cup
Carrot1/4 cup
Pachaayar 1/4 cup
Ivy gourd(Kovakka) 1/2 cup
