  Carrot Halwa

Ingredients:
    Carrot :  5 Nos medium size
      Milk full fat : 2 1/2 cup
      Sugar :  6 tsp
     Ghee : 2 tsp
    Cardamom Powder : ½ tsp
   Cashew nut -to garnish
     Raisin -to garnish
     Saffron a pinch

Preparation for the Halwa
·        Take the carrot and peeled.
·        In a  bowl add the grated carrots.
·        Add the milk into it and stir well.
·      Cook for about 10 to 15 minutes over low flame ,stirring well in between.Cook until the carrots are soft and the milk is evaporated.
·        You can see the milk is reducing slowly.
·        If the mixture reduce by 70 to 75 percent , you can add the ghee.
·        Add sugar and cardamom powder.
·        Stir continuously.
·        The mixture starts thicken.
·        Add the cashew nuts, raisins and the saffron.
·        Continue to stir and the mixture become thick.
·        You can see so many fine milk solids stuck in the side of the bowl. Put all in the halwa.
·        Decorate with cashew nut.
·        You can serve by hot or cool

NOTES
Adjust the quantity of sugar according to your taste.
You can also add one pinch saffron along with the milk for better flavor.
