Daal Palak, simple and easy to make . This is a very nutritious dish as well.
Daal Palak (Mung Bean Lentils with Spinach)

INGREDIENTS
Mung Bean Lentils : 1 cup
Spinach a bunch Chopped
Turmeric powder : 1/2 tsp
Green chillies : 3 to 4
Salt to taste
For tempering
Cumin seeds : 1/2 teaspoon
Dry chillies : 2-3
Finely chopped garlic : 2 tsp
Asafoetida : 1/4 tsp
Coriander powder : 1/2 tsp
Oil 2 tbsp
STEPS
Cook the washed lentils with salt, turmeric powder, green chilly, spinach and adequate water till done.Keep the cooked dal aside.
Heat oil in a pan,add the cumin seeds,when they start to splutter add the asafoetida and stir for a couple of seconds.
Add the dry chilli and garlic and saute till the garlic turns slightly brown in colour.
Add the coriander powder and stir for a few seconds.Switch off the heat and add to the Dal mixture and mix well.
Serve hot with Rice or Roti.
