Masala Macaroni


MASALA  MACARONI

This is a different  recipe with an Indian twist :
Ingredients:

Macaroni / Pasta  - 1 cup
Garlic - 1 tbsp (finely chopped)
Onion - 1 (finely chopped)
Tomato - 1 big
Carrot - 1/4 cup
Beans - 1/4 cup
Capsicum - 1/4 cup (finely chopped)
Red Chilly powder - 1/2 tsp
Turmeric powder - 1/4 tsp
Garam masala - 1/2 tsp
Pepper powder - 1/4 tsp
Italian sauce - 1- 2 tbsp
Kasoori methi - a pinch
Coriander leaves - 2 tbsp
Spring onion  - 2 tsp
Salt as required
Oil - 3 tbsp
Jeera - 1 tsp
Cream as needed (optional)

Method:
- Boil 4 cups of water and add the macaroni and required salt. Cook until soft (may take 10-12 minutes). I would suggest to refer the instructions on the pack. Drain it, rinse in cold water and set aside.
- Heat oil in a kadai, add in cumin seeds and when these splutter, add the chopped garlic and stir for half a minute.
- Add in onions and saute for 2 minutes.
- Now add the  carrots and beans , required salt and fry for two minutes in medium flame.
- Mash the tomatoes well and add it to the kadai. Cook until the tomatoes turn soft and blend well with veggies. The raw smell of tomatoes should disappear.
- Add in red chilly powder, turmeric powder, garam masala and kasoori methi.
- Stir well and fry until the oil separates. May take a couple of minutes in medium flame.
- Add in the Italian sauce and chopped capsicum at this stage and fry for a minute.
- Now add the cooked pasta. If the pasta is stuck together, add little water to loosen it up. Stir well for a minute or two.
- Add black pepper powder and garnish with coriander leaves / spring onion.

Note:
- If you are making for kids, you can add butter along with oil and also can fresh cream / mayonnaise/  cheese.
- You can use the veggies of your choice, like peas broccoli etc.
