Cashew Rice Balls


Rice Cashewnut Ladoo /Andi Unda (Kerala Special Cashew & Rice Balls)

 A very simple, easy traditional snack and at the same time high on the nutrient side too.
INGREDIENTS

Rice: 1 Glass(puzhungalari)
Jaggery: 200 gram
Grated Coconut: 1 Half
Cashew Nuts: 15nos chopped

DIRECTIONS
Step 1.Wash the rice and roast till golden brown. This would take approximately 15-20 mins.
Step 2. When it starts to pop, bring it from the flame and let it cool.
Step 3. Grind well the roasted rice till it becomes fine powder.
Step 4. Next grind the cashew-nuts. Do not run the mixer continuously, it will result in cashew butter, we don't need cashew paste, we need powdered cashews with few cashew pieces, so just pulse it .
Step 5. Mix together powdered cashews, powdered rice, powdered jaggery and coconut together. Take them a mixer jar and pulse them together 4-5 times to mix it well. This will help to bind them easily into balls. The fat in cashews and coconut, will mix well and make this process pretty easy.
     
Notes

Take care while roasting the ingredients, burning them will result in a bad taste of the end product.
Grind the rice and cashews separately.
If even after mixing everything together and pulsing in a grinder, you find it difficult to make them into balls, try adding little ghee. But it is totally unnecessary, if you pulse them together once.
