Egg Stew
Ingredients
Boiled Eggs-5 (cut in half)
Onion -1 sliced
Green chillies - 7 (cut into slits)
Garlic cloves - 6 (thinly sliced)
Ginger - 1/2 tsp
Half boiled Carrots-1/2 cup cubed
Half boiled Potatoes-1/2 cup cubed
A pinch of turmeric
Coriander powder-1 tsp
White pepper powder- 2 tsp
Garam masala powder - 1/4 tsp
Thick coconut milk -1/2 cup
Thin coconut milk - 3/4 cup
Curry leaves
Salt to taste
Oil -2 tbsp
Whole spices
Cinnamon stick, green cardamom-2, cloves-2, black peppercorns-8, star anise-1
Method
Heat oil in a wok and add the whole spices and let it splutter.Now add the onion slices and give a quick stir and add the curry leaves,garlic, ginger and green chillies. Mix well and cook until the onion turn soft.
Now add the coriander powder, pepper, garam masala and salt and combine well.Add the carrots and potatoes , saute it for few seconds and add the thin coconut milk. Mix well and cook for about 10 minutes or until the gravy reduced to half( check the seasoning).
Now drop in the boiled eggs to the gravy( do this carefully). Cover and cook for couple of minutes. Now open the lid ,add the thick coconut milk and give a quick stir. Switch off the flame and transfer to a serving dish garnish with cilantro. Ready to be served.
