Unniyappam


Unniyappam (ഉണ്ണിയപ്പം)/ Kuzhi Appam

Unniyappam is a Kerala traditional snack recipe. Try this tasty soft unniyappam.....
Ingredients:
   -------
Rice flour – 250gm
Jaggery – 200 gm
 Palayan kodan or kadhali pazham –  2 Nos
Coconut bits, Thengakothu – 2 tbsp
Cardamom powder - 1 tsp
Salt - 1 pinch
Oil for deep frying
Ghee - 2 tbsp, for frying coconut bits
Water -1cup (approximately )

Directions:

Heat 2 teaspoon of ghee in a pan, add in the coconut bits and fry till it become light brown in colour. Set aside.
In a sauce pan, add in the jaggery pieces and 1 cup of water. Boil until the jaggery pieces are completely melted. Strain to remove the impurities .
Peel the bananas, slice into small pieces and mash well. Set aside.
In a large bowl, add in the rice flour, pour the luke warm jaggery syrup into it ( Adjust the sweetness according to ur taste ..) , mashed banana, fried coconut bits, cardamom powder, salt and mix well.
Add water little by little into this and mix well until you get the consistency of dosa batter. The batter should be of dropping consistency. If the batter is too thick, add little water and mix well..taste the batter ..
Sweetness should be bit higher than your taste ,then only after frying the unniyappams will be perfect sweet.
Cover the bowl with a lid and keep it aside to ferment for 5 to 6 hours .
Unniyappam Preparation:

Heat the unniyappam pan and pour enough oil to fill the unniyappam moulds.
Once the oil gets really hot, set heat to the lowest.
Then fill ¾ portion of each slot with unniyappam batter and fry until cooked well or slight golden brown.
Once cooked, the sides will detach from the mould and floating in the oil. If not, try to remove from the mould carefully with the help of a fork.
Flip to all sides with the help of a fork and fry until golden brown in color.
Transfer to a kitchen paper towel, repeat the same process to make the rest of the unniyappam.
Cool them to room temperature and serve after.
you can keep 2-3 days in refrigerator
When youwant to serve ,take the appam from fridge and heat in the oven for 20-30 seconds .
Then you will get soft unniyappam ..
