Shish Tawook

Shish Tawook is a traditional Arabic and Turkish kabab. Chicken chunks are marinated in a mixture of yoghurt, lemon juice, ginger garlic, spices and herb. The yoghurt tenderizes the chicken while the spices and other marinade ingredients infuse it with flavor.

Ingredients:

Skinless boneless chicken breast, cut into cubes : 500 gm
Freshly squeezed lemon juice : 1/2  cup
Cloves of garlic, crushed : 10
Plain yogurt  : 4 tbsp
Olive oil : 6 tbsp
Red vinegar (apple cider vinegar) : 2 tbsp
Ground white pepper : 1.5 to 2 tsp
Ginger paste : 1/2 tsp
Oregano : ½ tsp
Paprika : ½ tsp
1+ teaspoon of salt (or to taste)
Tomato paste : ½ to 1 tsp
       Method :

Mix all ingredients well together while rubbing the chicken.
Place in a container, cover  and marinate in the fridge for at least 4 hours.
Skewer the chicken right before grilling. Brush the skewers with a bit of oil and let them sit for a while.
Grill on medium heat for 18 - 20 minutes maximum. Don't over-grill otherwise the chicken will become hard.
As soon as you remove them from the grill, place them in a warm pot, replace the lid tightly, and let rest for 8-10 minutes - this helps the chicken become more moist .
Serve these shish tawook with some hummus,  pita bread and a salad and enjoy a middle eastern meal at its best.
