Chilli Potato

Chilli potato

Chilli potato is an easy Indo-Chinese dish which can be served as a side dish with fried rice where shallow fried potatoes are tossed in chilli based sauce. Kids would love it.

Ingredients

3 large potatoes
2 tablespoons corn flour
1 ½ teaspoon pepper powder
1 large onion,sliced
3 green chillies,chopped very fine
2 tbsp chopped spring onion white
2 tbsp chopped spring onion greens
2 tsp finely chopped ginger-garlic
2 tablespoons tomato ketchup
2 teaspoons soy sauce
½ teaspoon sugar,salt
Oil

Instructions

Wash and peel the potatoes. Slice them into wedges or fingers. Immerse them in salted water for 30 minutes. Parboil them and drain as we will do for french fries and soak them in cold water for 30 minutes.
Drain the potatoes and wipe with a kitchen towel. Now add cornflour,pepper powder and salt in a bowl and mix well.
Toss the drained potatoes in the flour mixture and mix well.
Heat some oil in a shallow frying pan and shallow fry the potatoes in batches.
Fry them until golden and crisp from both sides,drain the excess oil if any and set aside.
In the same pan add the finely chopped ginger and garlic and saute well.
Add the chopped green chillies,spring onion whites and sliced onions.
 Saute till the raw smell goes off. Add tomato ketchup,soy sauce,pepper powder,salt and sugar.
 Mix well and saute for 5-7 minutes in high flame.
Add the fried potatoes and toss well quickly.
Add the spring onion greens as garish and serve chilli potato ....
