A pulao recipe, filled with vegetables rich in nutrients and also yummy in taste.. Cook this delicious one-pot meal with flavours and aroma of various spices... Ingredients: -------- Basmati rice – 1 cup 1 medium sized capsicum(finely chopped) 2 large tomatoes (finely chopped) 2 onions (peeled and sliced) Sweet corn – 1/4 cup Green peas – 1/2 cup Chopped -1 carrot ,4 beans ,1 potato Ginger garlic paste – 1 tsp Red chili powder – 1/2 tsp Turmeric powder – 1/4 tsp Pav bhaji masala – 1 tsp Bay leaf – 2 Cumin seeds – 1 tsp Lemon juice – 1 tsp Ghee / oil – 2 tbsp Coriander leaves for garnishing Salt as per taste Instructions: ----------- Rinse the rice and Soak the rice in enough water for 20 minutes. Drain the water completely and then add the rice to a pan along with 4 cups of water, little salt and few drops of oil. Stir gently and cook the rice on medium //flame till the rice grains are cooked well, but make sure it is not mushy. Drain the excess water and spread the rice in a plate and cover it. Cook carrot, potato, beans, corn and green peas in a pan . Keep aside. In a pan add ghee in a frying pan and add the cumin and fry them till they crackle. Add sliced onions, bay leaf and saute till onions are translucent. Add ginger garlic paste and saute for few seconds. Add the finely chopped tomatoes and capsicum and saute for few minutes till tomatoes are soft and mushy. Add turmeric, red chili powder, pav bhaji masala and little salt and stir well. Keep stirring till you see oil leaving on sides on the pan. Add cooked vegetables and mix well. Now add the cooked basmati rice and gently mix the veggies with the rice.
