Crispy coated onion rings ....
Ingredients:

Onion -2
All purpose flour -3 tbsp
Corn flour -1 tbsp
Rice flour -1 tbsp
Potato -one small cooked
Curd- 3 tbsp
Chilli powder- 1/2tbsp
Garlic paste -1/2 tsp
Powder powder -a pinch
Bread crumbs -1 cup
Oil for frying
Instructions
Rinse the onion and cut into approximately ¼ inch rings
Carefully separate the rings from each other , toss with all purpose flour. Arrange the floured rings on the cooling rack; let stand for 15 minutes.
In a large bowl, whisk the remaining flour with the corn flour ,rice flour, garlic paste soda powder , paprika/chilly pd and salt
Grind nicely the cooked potatoes with curd.
Add this batter to the above mixture along with a pinch of soda powder
Dip each ring in the batter then dredge with bread crumbs (I used a fork to transfer from the wet bowl to the dry bowl so hands didn’t get gunky).
Repeat same with all other onion rings. Place the finished onion rings on a plate until ready to fry.
Once the oil is hot enough for the onion rings to fry, place the double battered onion rings in the hot oil and cook for 3-4 minutes or until exterior is crisp and light golden brown. Put 3-4 rings only at a time. Let onion rings cool on paper towels so soak up any excess oil.
Notes:
Make sure your onion rings are separated as they cook in the oil so they don't stick together.
Turn them over so they cook evenly on both sides.
Put a metal strainer over a bowl and place it nearby.
Place rings in strainer to drain.
